I love a good recipe that the whole family can enjoy together. This meatball recipe was inspired by the green chicken meatballs in The Good Life Eatery cookbook. They have so much flavour and can be eaten either with a good tomato sauce and spaghetti or with vegetables and potatoes. They’re even good dipped in hummus. Also a yummy addition to a picnic or a school lunch box.
A handful of button mushrooms
1/2 an onion
50g mixture of fresh basil, parsley and coriander
Large handful of washed spinach
500g chicken mince or chicken breasts
20g parmesan cheese
Place the mushrooms and onion into a a food processor and blitz until they are in small pieces. Empty into a bowl. Place the herbs, egg and spinach into the food processor and blend till you have a smooth mixture. It should look like a runny pesto. Add to the bowl. If you have chicken breasts place them in the processor and blitz and add to the bowl. If you have mince add straight to the bowl. Place the parmesan and breadcrumbs into the bowl and mix everything together with your hands.
Roll into small meatballs. I made about 35 meatballs from this mixture. Heat a tablespoon of oil in a frying pan and cook on a low/medium heat for about 10/12mins until cooked through.
