Recipes | Vietnamese Summer Rolls

You might be thinking, oh these are just for adults or children with experimental palettes, but even with our most pickiest of eaters we find variation is key. And what’s more with this recipe they can make their own, which is definitely more fun and it’s been proven that children are more likely to try things if they’ve helped make it. Also there’s no set rules for what goes into these, you could place your child’s favourite vegetables on the table alongside some new ones and let them make their own rolls. You never know one day they might surprise you and add a few of the new vegetables to their roll.

You’ll need
Vietnamese rice paper
Vermicelli rice noodles
Carrots
Cucumber
Red pepper
Yellow pepper
Basil
Coriander
Prawns/chicken/salmon/tofu
Avocado
Bean sprouts
Carrot

For the satay sauce
3tbsp Crunchy peanut butter
1tbsp Sesame oil
1 tbsp Soy sauce
1 tbsp Sweet chilli sauce
Squeeze of lime or lemon juice


Method
Soak the rice paper one at a time in warm water for about 10/15 seconds until soft. Then place on a plate and fill with your chosen ingredients and wrap up. Mix together the ingredients for the satay sauce serve along side the rolls.
