Recipes | ‘Chuck It All In’ Granola Bars

With the Easter holidays a distant memory and summer term stretching out in front of us, we thought a yummy and nutritious after school snack recipe was needed asap.
These delicious granola bars are quick and easy to knock together and easy for the children to make with you.

We’ve adapted this from Smitten Kitchen’s wonderful recipe here.

265g oats
50g granulated sugar
1/4 tsp ground cinnamon
350g chopped dried fruit, nuts and seeds of your choice
2 tbsp almond or peanut butter
85g melted butter
3 tbsp honey or maple syrup

Preheat oven to 180C. Mix together the dry ingredients in a large bowl (oats, sugar, cinnamon and dried fruit & nuts). In a separate smaller bowl mix together the melted butter and honey. Add the wet ingredients to the dry, add the nut butter now as well. Mix together until all combined. Place into a baking paper lined brownie tin or one you would use for flapjacks. Push the mixture down into the tin with the back of your spoon. Place in the oven for 30-35mins until golden brown. They will feel soft in the middle when still hot but will harden when they cool. Leave to cool completely before removing from the tin and cutting into squares.
