Sweet Potato, Chickpea & Spinach
Roast a large sweet potato for 30-45 minutes until it is soft all the way through. Scoop out the flesh into a bowl. Add two handfuls of washed spinach to a pan and add a couple of tablespoons of water and pop the lid on and steam for a few minutes until the spinach has wilted. Drain a can of chickpeas and add 300g to the bowl of sweet potato along with the cooked spinach. Using a hand blender, blend the ingredients together till the desired consistency for your babies current stage.
Sweet Potato & White Bean
Roast a large sweet potato for 30-45minutes until it is soft all the way through. Scoop out the flesh into a bowl. In a saucepan place 400g of drained white beans, cover with water and simmer for 5 minutes. Drain the beans but keep the water. Blend the potato and beans together adding a little cooking water to make a smooth consistency. Finally stir through a level teaspoon of cinnamon.
Butternut Squash, Salmon & Couscous
Chop the squash into small chunks and steam until soft. Place the salmon onto a baking tray, skin side down and crush 1/2 a garlic glove over the top. Bake for around 15 minutes until cooked through. Place 60g couscous into a bowl and cover with boiling water to a bout 1/2 cm above the top of the couscous, cover the bowl and let sit for 5 minutes.
Blend the cooked butternut squash, with or without the salmon depending on the stage of your child’s weaning. Then stir into the cooked couscous.
Apple, Pear, Vanilla & Cinnamon
Peal and core two pears and two apples, cut into small chunks. Cut a vanilla pod lengthways and scrap out the seeds, place in a sauce pan with about 100ml water along with the fruit. Pop the lid on and steam for 10-15 minutes until the fruit is soft. Blend the cooked fruit with a hand blender and finally stir though a teaspoon of cinnamon.
