Simple, quick, easy and all made in one pot. What more could you want with tired children on your hands leading up to half term.
- 1 white onion
- 8 bottom mushrooms
- 1 courgette
- 1 carrot
- 6 broccoli florets
- 8 cherry tomatoes
- one carton passata
- pack of 8-12 chipolatas
- 300ml veg stock
To be served with mash potato, rice, pasta, sweet potato or perfectly good by itself!
- Chop all the vegetables up
- Heat a gulg of olive oil in a large saucepan or pot and add all the veg and sauté for between 5-10 mins until onions soften and mushrooms darken, stirring regularly to prevent catching or sticking. You may need to add a dash more oil.
- Add sausages and cook for further 5 mins to seal sausages and given them some colour.
- Add passata and stock and cook on medium heat for about 15mins until sausages are cooked through and sauce is to desired consistency. Serve immediately.
This meal can be frozen once cooked. It can also be used as a family meal or be blended for weaning!
