Today we’ve got a lovely winter warmer recipe for you. Sausage and Bean casserole. It’s very versatile, which means the list of ingredients is very basic. Add in what you’ve got. It’s one of those throw in any vegetables you’ve got dishes. We do love a one pot dish meal as less washing up = more playtime!
4 Sausages (of your choice, I used veggie ones, they are hiding in there somewhere – I promise)!
1 tin of beans (of your choice once again, I chose butter beans. Cannellini beans work well, and even baked beans if you’re raiding the cupboard)
1 garlic clove
1 sweet potato
A handful of mushrooms
1 tin chopped tomatoes (if you wish)
1 stock cube (salt free if you prefer)
Herbs ie. oregano/ mixed herbs/ (smoked) paprika
Pepper, to taste
Variations: you can add all sorts of beans or lentils. And veggies such as carrots, courgette, cauliflower.. the list goes on.
Cook the sausages to their instructions.
Chop the onion and garlic, fry lightly and then add other veggies, and sautee a little. When the veggies are looking a little transulacent. Add herbs, tinned tomatoes and beans.
Cook for about 10-12 minutes. Until sweet potato is cooked through.
Once cooked add the sausages, chop them diagonally and add to casserole.
