Recipes | Stuffed Sweet Potato Skins 

Simple, delicious, healthy and so easy! This is a winner of a dish for the whole family. It can be made ahead of time and placed in the fridge (or freezer) and reheated when needed.

Ingredients
4 Sweet potatoes
1/2 Red pepper, diced
150g Sweetcorn
150g Cooked chicken, chopped into small pieces
100g Cheddar cheese, grated

Bake the sweet potatoes until they are cooked through. When cool enough, cut in half and scoop the insides into a large bowl. Put the skins back on the baking tray. Mash the potato in the bowl and then add all the other ingredients and mix together. Using a spoon, scoop the mixture back into the potato skins, put back in the over for 25/30mins. I serve this to little ones with crudité and to adults with a dressed green salad. Enjoy!
