A simple and tasty one pot dish for the whole family.
Butter and olive oil
Chicken thighs and drumsticks
1 or 2 Low salt chicken stock cubes
Heat the butter and oil in a large casserole dish. Add the chicken, skin side down and brown. Crumble over the stock cube/s. Add a mug full of water then add the pearl barley. Add more water to cover the chicken. Place the lid on the pot and simmer for an hour and fifteen minutes. Keep checking on the dish and add more water when nessesary. With half an hour to go add your carrots and green beans. When ready the chicken should fall off the bone very easily. Remove the bones and then serve.
