Recipes | Quick & Easy Veggie Couscous

This is a great chuck-everything-and-anything-into the pan dish!! Perfect for a quick lunch or dinner, brilliant for eating hot or cold and if you are cooking for a number of people it’s an easy dish to add meat to individual portions if need be. A perfectly versatile recipe for busy families.

You will need:

  • 1/2 chopped onion
  • 1 clove crushed garlic
  • 1tbsp olive oil
  • knob of butter
  • 120g couscous (regular or giant)
  • 300ml stock
  • Any vegetables you have to hand. This time I used red pepper, carrots and courgettes-I kept these chunky so that had some crunch to them.
  • Cheese. I like to use feta cheese but goats cheese or mozzarella would also work well.

Heat the butter and oil in a frying pan, add the onions and fry for a few minutes until soft, then add the garlic and fry for a further minute. Next add your vegetables and couscous, season and continue to fry for a couple of minutes and then add the stock. Bring to the boil and place a lid over the pan and turn off the heat. Leave for 5 minutes, then using a folk, fluff the couscous and crumble over the cheese and serve.
