Recipes | Moroccan Chicken

Ingredients

2 chicken breasts
1/2 teaspoon paprika
1/2 teaspoon ginger
1/2 teaspoon tumeric
1/2 teaspoon cinnamon
2 tablespoons olive oil
1 teaspoon honey
1 onion
2 garlic cloves
1/2 courgette
1 carrot
1/2 red pepper
4 tomatoes, or a tin of chopped tomatoes
5 dried apricots
1 tablespoon tomato puree
1 tin chick peas
1 stock cube

Method

Mix the oil and honey with the spices, turmeric, cinnamon, ginger and paprika. Chop the chicken into bitesize pieces and then leave to marinade in the honey, oil and spices. Meanwhile prepare your vegetables, chop the onion, garlic and fry gently for about 5 minutes in a little oil. Chop the remaining vegetables – carrot , courgette, pepper (and any other veg you wish to add).
Add these to the pan, and sautee until a little soft. Add the chicken and cook gently for 5 minutes.
Meanwhile chop the tomatoes if you are using fresh tomatoes. Add to the pan along with the tomato puree and chick peas. Simmer for around 20minutes until the chicken is tender.

Serve with couscous.

This recipe is adapted from one we learnt during our training. We tend to put all sorts of veg in. The natural sweetness of the apricots makes it a popular but healthy meal in our household.
